Gluten-free: A fad or something else?
These days, you can buy an incredible variety of products that are gluten free, from bread  and cookies to pizza crust and more.  Even products that neverhad gluten are now including “gluten free” on their packaging.

The multi-billion dollar gluten free industry is aimed the exploding number of people who are cutting gluten out of their diets. In a recent study, more that 25 percent of Americans reported they were trying to cut down on gluten or avoid it altogether.

Gluten is  a complex of proteins found in grains such as  wheat, barley, and rye.  It’s a spongy substance that helps dough to rise. For people with celiac disease, eating foods containing gluten can cause severe bloating, fatigue and diarrhea.

Celiac disease, a  gastrointestinal autoimmune condition, is thought to be largely  under-diagnosed. It can develop at any time and at any age. Researchers believe that up to 3  million Americans have celiac disease – but most don’t know they have it.

On the other hand:

Millions of people believe they have wheat allergies or gluten intolerance when they do not.
